"Process" means the way that a coffee bean is removed from the coffee cherry. Anaerobic is an extra step of fermentation done before the coffee is processed either via the washed/natural/honey method. Anaerobic is a process which removes oxygen, the intact coffee cherries are sealed in airtight containers, and all oxygen is removed; creating an anaerobic environment. This lack of oxygen will slow down the process of fermentation, this forces more fruit flavours from the cherry into the bean. Different acids are developed during this process which can often lead to a brighter flavour profile. This extended fermentation results in a coffee with a more intense fruitiness, brightness and can often be described as funky.
