"Process" means the way that a coffee bean is removed from the coffee cherry. Natural is the oldest processing method, originated in Africa and makes use of the low humidity and infrequent rainfall. This process is the most straight-forward; the whole cherries are laid out on raised beds or patios and are left in the sun for between 3 and 6 weeks. They are turned using rakes constantly throughout the day to ensure even drying of the entire cherry and to prevent spoilage. Once the cherries are dried, they are hulled to remove any dried fruit and dry milled to remove the beans skin. Natural processed coffees will often have a fruity, sweet taste with a heavier body and wine-like characteristics.
