Arabica vs Robusta: The Science Behind Every Cup

Arabica vs Robusta: The Science Behind Every Cup

If you’ve ever looked closely at a bag of specialty coffee, you’ve probably seen the phrase “100% Arabica. But what really sets Arabica apart from its hardier cousin, Robusta?

At a biological level, they are two entirely different species of coffee. Arabica thrives at high altitudes, growing slowly to develop complex sugars and crisp organic acids. Robusta, conversely, grows at lower altitudes. True to its name, it is a robust, pest-resistant plant containing nearly double the caffeine and significantly less sugar than Arabica.

These genetic traits dictate exactly how they perform in your cup, which is why we handle them very differently in our roastery.

For our Guest Beans range, we source exclusively 100% Arabica. Because Arabica is highly sensitive to its environment, it acts as a perfect canvas for terroir—the unique combination of soil, altitude, and climate of its origin. This exclusivity allows us to showcase just how radically different coffee can taste from one lot to the next, offering you a rotating journey of distinct, nuanced flavours.

However, we take a different, deliberate approach for our Brazilian Love Affair.

We know that a house espresso needs to be a daily workhorse, often stepping up to pair with milk in lattes and flat whites. To ensure the coffee doesn't get drowned out, we intentionally include high-quality Robusta. Its natural characteristics give the espresso a solid body and a heavy, satisfying weight that cuts beautifully through milk.

To turn that heavy base into a masterpiece, we blend it with two distinct Arabicas:

    ·       A natural-processed Arabica to introduce a deep, fruit-forward sweetness and additional creaminess.

    ·       A washed-process Arabica to inject vibrancy, cleanliness, and a refreshing pop of acidity.

The result is a house espresso with the punchy backbone of Robusta, beautifully elevated by the complexity of Arabica. Whether you are exploring the distinct origins of our Guest range or enjoying the balanced comfort of our House Blend, there is a science and a story behind every bean.
