Overview

This single origin natural is imported by CATA, experts in the Colombian green coffee trade, from producer Nestor Lasso's El Diviso Farm in Pitalito. What's special about this coffee (called Ombligon which means belly button in Spanish because of the beans unique shape) is that it is fermented using brewer's yeast, and the results are an intensely juicy cup, with notes of cherry, strawberry and watermelon.

Country: Colombia

Roast Profile:

Alex explains why he chose this coffee for his entry into the UK Barista Championships: "I chose this coffee for its incredible, complex flavour profile and its versatility. It presented an opportunity to present something I've never really come across before and this made me very excited! As espresso, the intense cherry shines straight away in the aroma and transfers through to the palate, followed by a strawberry/watermelon aftertaste. With steamed milk it takes on a new identity, presenting flavour notes of strawberry ice cream, mango and raspberry. A truly special coffee."

Sustainability

Importer CATA exclusively focuses on coffee from Colombia, which allows them to specialise and develop close relationships with the farms there. Their ethos is that every coffee sack purchased through them is helping to build a better life for Columbians "That coffee sack is a light that shines a brighter future on generations of youths, who aspire to build a destiny that they can choose" CATA has worked directly with Nestor Lasso to help him explore the benefits of specialty coffee and exporting to the UK, by educating him on the market, and also giving guidance on processes and quality control.

Team Recommendation

Alex says: "With this coffee roasted more for espresso, I would highly recommend using it on an espresso machine, but it also shines brightly on filter methods too such as aeropress/drip."

Colombia

Colombia is the third biggest producer of coffee in the world, and its Coffee Cultural Landscape is a designated UNESCO World Heritage site. The altitude in the west of the country, in the Andean region, and the warm weather make for perfect coffee growing conditions all year round.
