Taste Notes: Blueberry, Lemon Sherbet

Our roasters were left momentarily speechless during a cupping of this coffee: “Just, wow!” Thankfully, they recovered their power of speech long enough to tell us about the taste notes: a fruity cup, with notes of lemon, blueberry and physalis – a type of gooseberry with a tangy grape-like flavour.

Buno Coffee Trading is a relatively small exporter who manage seven washing stations located in the area of Guji in Ethiopia’s southern region. To ensure the coffee cherries are picked at their ripest, farmers are paid a premium for kilos delivered after the harvest.

High above sea level, in the fertile red volcanic soil of south Ethiopia, coffee producers grow their coffee on the hills and village outskirts under the shade of indigenous trees. Arabica beans originate from Ethiopia, and the coffee trade accounts for over 10% of the country's GDP.

French Press / Cafetiere

Recipe: 
-17g coffee (coarse grind) 
-300g water 
-Total brew time 4 minutes 
-Coffee to water ratio: 1:17
 
Method: 
1. Pre heat/rinse French press with hot water then discard water 
2. Add 17g coffee to the French press and tare scales 
3. Start timer and pour 50g water onto the coffee grounds 
4. At 30 seconds pour in another 250g water and stir three times 
5. Add plunger to top of the French press and brew up to 4 minutes on the timer 
6. At 4 minutes, gently plunge the French press 
7. Serve into pre heated cups & enjoy

V60

Recipe: 
-15g coffee (medium grind) 
-250g water 
-Total brew time 3-3:30 minutes 
-Coffee to water ratio 1:16/17 

Method: 
1. Fold filter along the crease and place in the v60 
2. Saturate the filter paper with hot water to ensure there’s no papery taste from the filter 
3. Place v60 & vessel onto the scales and tare 
4. Add 15g coffee to the v60 and tare scales again 
5. Start timer and add 50g water going in smooth, circular motions working from the centre outwards (avoid pouring your water onto the filter paper at this point) 
6. At 30 seconds add another 50g water 
7. Continue to add 50g water every 30 seconds until you reach 250g 
8. Gently swirl the v60 then let stand until all the water has passed through. This should be achieved between 3-3:30 minutes 

Tip: If the water passes through before 3 minutes then you will need a finer grind size If the water takes longer than 3:30 minutes to pass through then you will need a coarser grind size

Espresso

Recipe:
-18-19g coffee (fine grind)
-Espresso yield 36-40g
-Extraction time: 30-35 seconds
-Coffee to water ratio 1:2

CARRIERS:

We use Royal Mail and Parcel Force as our chosen distribution partners. You have the choice at checkout to select your preferred carrier with the following restrictions: Royal Mail First Class and Second Class (untracked) are available on packages up to 2kg and the cost is variable depending on the weight. Deliveries are made 6 days a week. Parcel Force Express 24 (tracked) service is available for all packages up to 20kg. Deliveries are made Monday to Friday only, excluding Bank Holidays.

PROCESSING TIMES:

Royal Mail orders received before 9am (Monday to Friday) will be processed and dispatched on the same day. Parcel Force orders received before 12pm (Monday to Friday) will be processed and dispatched on the same day.

After these cut-off times we will still aim to dispatch on the same day if possible, but this is not guaranteed. We do not dispatch orders over the weekend or on Bank Holidays. *Due to Royal Mail and Parcelforce strikes there may be delays in recieving orders placed on the 26th and 31st of August*

INTERNATIONAL DELIVERY:

Unfortunately, we are only able to deliver to mainland UK. We are unable to deliver to Ireland.
