Costa Rica, like most of its South American counterparts, maintains a perfect climate for growing speciality coffee, and on the Cordillera Del Fuego farm, owner Don Luis has experimented with processing methods to make his coffee stand out from the crowd. He picks very mature coffee cherries that have a high sugar content. When submitted to heat and a lack of oxygen, it essentially caramelises the beans, and the flavours that develop are exceptionally sweet and fruity. Delicious.

Sustainability

Don Luis Eduardo, owner of Cordillera de Fuego is a member of costa Rica’s NAMA (Nationally Appropriate Mitigation Actions), whose objective is to dramatically reduce emissions of green house gases within the coffee sector. As part of the NAMA project, Cordillera de Fuego has implemented several small projects to reduce its water usage and increase its efficiency. The biggest project was the installation of solar panels, which supply 100% of the energy of the main office and 50% of the energy of the mill.

Costa Rica

Costa Rica is known for producing high-quality coffee; it’s the country’s third most important agricultural export after bananas and pineapples.

Coffee production in Costa Rica is largely concentrated in the Central Valley, where the balanced climate and altitude are ideal for growing coffee. Costa Rica provides around 1% of the world’s coffee production.
